Avocado Kale Chilli Salad

A  raw fresh summer salad, with a delicious combination of leafy greens, creamy avocado, spicy chilli and fresh vegetables, ideal for those days when you are craving something a little lighter and the perfect side salad to almost any dish!

Serves 4

Ingredients for salad

1 bunch kale (tuscan kale or curly leafed scots kale) stems removed
1 1/2 avocados chopped
1/2 red onion small thinly sliced
1/2 lebanese cucumber thinly sliced
red chilli sliced to taste
coriander to taste

Method for salad

Remove stem from kale, wash and chop coarsely, place into mixing bowl
Grind salt and pepper through kale and let sit for about 10 minutes to enhance flavour
Add chopped avocado, red onion, cucumber, red chilies, and coriander toss gently through salad

Ingredients for dressing

1 avocado
6 teaspoons lemon juice
6 teaspoons lime juice
1/4 teaspoon mustard powder
1/4 teaspoon cayenne pepper
coriander to taste
salt and pepper to taste

Method for dressing

Place ingredients into vitamix and blend on high speed for about 1 minute
Toss dressing gently through salad

Garnish

flaked almonds
red chilli sliced
salt and pepper to taste

Kale is a form of cabbage. It is full of antioxidants, anti inflammatory nutrients and cancer preventive nutrients. It is very high in iron, vitamin C, B complex group of vitamins, and calcium. Kale contains sulforaphane particularly when chopped or minced. It also has a chemical which boosts DNA repair in cells.

Carrot Coconut Salad

This is a fantastic 5 minute salad, lots of flavour and so easy to make, YUMMO!!

Serves 4

Ingredients salad

4 carrots coarsely grated
11/2 tablespoon sesame seeds
2 tablespoons currants
6 tablespoons coconut flakes
celtic salt and pepper to taste
coriander to taste

Method for salad

Grate carrots coarsely place into large mixing bowl
Sprinkle celtic sea salt and pepper on carrot, and massage through with hands to enhance the flavour
Add sesame seeds, currants and flaked coconut

Ingredients for dressing

1 teaspoon olive oil
1 juicy lime

Method for dressing

Mix olive oil and lime juice together in a bowl drizzle slowly over salad and mix through, taste as you go

Garnish with coriander, salt and pepper to taste and enjoy!
